Mark Curtis Meatball Recipe
1 lb ground meat: beef, pork, chicken or turkey
1 cup seasoned bread crumbs
1/4 cup fresh grated or dried parmeasan cheese
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tsp dried parsley or 1 TBSP chopped fresh parsley
2 cloves garlic crushed or finely chopped
1 tsp fennel seeds
2 TBSP milk
2 TBSP Olive oil and (2) Bay Leaves.
Mix all ingredients except the olive oil. Roll into about 16 to 20 golf ball sized meatballs. Heat olive oil in a frying pan. Saute meatballs turning often until they brown on all sides. Once they are browned, drain the oil and add your favorite tomato sauce from a jar or homemade, plus two bay leaves. Slowly simmer at least one hour. Serve with pasta as an entree...or skewer with tooth picks and serve as appetizers.

simmer in a pan your favorite red sauce..
1 lb. ground lean hamburger
1 sleeve of saltine crackers crushed
2 eggs beaten
1 tbs. of parsley
1 tbs. of basil
1 tbs. of garlic powder
2 tps. of black pepper
mix well and form small balls by rolling the mixture in the palm of your hands place on greased baking sheet and place in 350 oven for 10 min.
remove from the sheet and place in simmering red sauce and simmer stirring occasionally for around 3 hrs.
