Steve's Italian Tuna Salad:

8 ozs. of albacore white tuna packed in water
4 celery stalks finely chopped
14 cup black olives chopped
1/4 cup tomatoes chopped
1/8 cup sweet onion chopped
2 tbsp of olive oil
3 tbsp of balsamic vinegar
2 tps of black pepper
2 tps of tabasco sauce
1 tbsp. of garlic salt
fresh baby spinach
add all ingredients except the spinach in a bowl mix well and chill in frig for a few hours.
in a plate arrange a few had fulls of the baby spinach add the tuna drizzle with olive oil and serve cold!

Mark's Summer Salad
1 head of broccoli chopped
1/2 a cauliflower chopped
4 slices bacon cooked and crumbled
1/3rd cup raisons
1/2 cup sunflower seeds
1/2 red onion, chopped
1/2 cup shredded cheddar cheese
Dressing:
1 cup mayo
2 TSBP sugar
1 1/2 TBSP red wine vinegar
Mix all together and chill!
For an added touch, if you like seafood, toss in some cooked shrimp!
