Steve's Mom's Veal Marsala
2 thin lean veal cutlets cubed
1/2 cup chopped fresh parsley
3 chopped garlic cloves
1 cup chopped mushrooms
1/8 th cup Marsaala wine or any dry cooking wine will do.
flour to dredge the veal
2 tps. salt
2 tps. of black pepper
1/2 cup cooking oil
deep fry pan
heat oil in fry pan an when hot add parsley and garlic then add mushrooms and Marsala wind simmer for at least 15 min.
add veal dusted in flour add salt and pepper and simmer another 15 min
Mark's Mom's Hamburger Stroganoff
2 onions chopped
3 tablespoons butter
2 tablespoons flour
1 cup beef stock (or water and beef bouillon cube)
1 tablespoon tomato paste of catsup
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1 pound lean ground beef
1/2 pound sliced mushrooms
1 cup sour cream
Saute onions is butter until clear. Stir in flour and, add stock , stirring until smooth. Add tomato paste, Worcestershire sauce, salt and pepper. Simmer and stir for 10 minutes.
In another frying pan brown beef, stirring to prevent lumping. Add meat to thickened sauce. Gently fry mushrooms in beef pan, about 10 minutes, add to beef. If you wish to serve this dish hours later, put it aside now, and when heating later add sour cream, being careful not to let it boil.
Serve with noodles, rice, or plain.
Serves 6.
