Mark Curtis and Steve Cascione's burger cook off

Mark Curtis and Steve Cascione go head to head in a burger cook off! The judges were from J&J Materials in Rehoboth.

Here are their recipes:

Mark’s Mushroom Swiss Burger

Ingredients:
1 ½ Pounds of Ground Beef (80-20 mix)
One large Vidalia or Mayan Onion
1 - 8oz box of sliced mushrooms
Butter
4 Kaiser Rolls
4 Slices Swiss Cheese
Montreal Hamburger Seasoning
Salt and Pepper
Butter and Olive Oil
Soy Sauce and Red Wine
Special sauce (2/3 cup mayo; 1/3 cup Ketchup; one tablespoon pickle relish)

Mix beef with salt and pepper and hamburger spice. Shape into 4 patties. They will be slightly more than 1/3 pound each. Grill to desired doneness, turning often.

Slice onion and sauté in 2 tablespoons butter and 2 tablespoons olive oil until they are browned
Saute mushrooms in one tablespoon butter, one tablespoon Soy Sauce, and ¼ cup red wine.
About one minute before removing burgers from the grill, lay a slice of cheese across each until it melts.
Brush rolls with olive oil lightly, then toast on grill.
Put generous amounts of sauce on toasted rolls, as well as generous amounts of onion and mushroom. Top with the burger!

Steve's Bacon and Spicy Cheddar Cheeseburger:

Ingredients:
85% lean sirloin beef meat
bulky roll
shredded habanero cheese
shredded cheddar cheese
bacon strips
lettuce
tomato
1000 Island dressing
