 Week of 1/18/2012 Curtis-Cascione Recipes – Beef Stir Fry – vs. Asian Lettuce Wraps

Beef Stir Fry (Steve Cascione)

1/2 lb lean hamburger cook in large fry pan until brown add 1tbs of salt 1 tbsp of pepper 1 tbsp of parsley 1tbs of garlic powder 1 tbsp of paprika and 1 tbsp of basil for a kick 1 tps of tabasco..optional

add 1/2 cup chopped green pepper 1/2 cup chopped celery 1/2 cup chopped onion 1/2 cup chopped tomato 1/cup of string beans.1/2 cup of asparagus tips 1/2 cup of bean sprouts. cover pan and turn heat up on high stir it occasionally should be done in less than 10 min.


 Asian Lettuce Wraps (Mark Curtis)

2 teaspoons vegetable oil

1 pound ground beef  (or sub ground turkey or chicken for lower fat and calories!)

2-inch piece ginger, peeled and finely grated

2 scallions, chopped

1 Diced carrot

2 cloves garlic, minced

2 tablespoons soy sauce

1/2 teaspoon red pepper flakes

1/4 cup hoisin sauce

1/4 cup chopped peanuts

Salt and freshly ground black pepper



1 head Boston lettuce, leaves separated, cleaned and dried In a skillet over medium-high heat, add the vegetable oil and saute beef until brown. Stir in ginger, scallions, garlic, soy sauce, red pepper flakes, and hoisin and cook for 1 minute. Remove from the heat and stir in the peanuts. Season with salt and pepper and serve warm wrapped in lettuce cups.
