Mark's Egg Frittata
Ingredients
- 6 eggs, beaten
- 1 or 2 red potatoes thinly
sliced and sautéed until brown and crispy - 1-ounce Parmesan, grated
- 1/2 teaspoon black pepper
- Pinch salt
- 1 teaspoon butter
- 1/2 cup chopped roasted
asparagus - 1/2 cup chopped country ham
- 1 tablespoon chopped parsley
leaves
Directions
Preheat
oven to broil setting.
In medium size bowl, using a fork, blend together eggs, Parmesan, pepper,
and salt. Heat 12-inch non-stick, oven safe saute pan over medium high heat.
Add butter to pan and melt. Saute very thinly sliced potato until golden brown;
flipping a few time so it is crisp. Layer potato slices like a pie crust Add
asparagus and ham to pan and saute for 2 to 3 minutes. Pour egg mixture into
pan and stir with rubber spatula. Cook for 4 to 5 minutes or until the egg
mixture has set on the bottom and begins to set up on top. Sprinkle with
parsley.
Place pan into oven and broil for 3 to 4 minutes, until lightly browned and
fluffy. Remove from pan and cut into 6 servings. Serve immediately.
Steve's Bacon,
tomato and cheddar cheese omlette
4 eggs beaten
1/2 cup light cream
1/4 cup sour cream
3/4 cup shredded cheddar cheese
1 tps nutmeg
4 strips of bacon cooked and drained
1 tp. black pepper
2 tps salt
add all ingredients in bowl and hand beat until smooth; add
1/4 cup chopped red tomatoes
1 tbsp of parsley
1 tps of basil and beat some more until smoothed
heat oven to 375 spray Pam in a oven fry pan, pour in
mixture into the pan
bake on bottom rack for 4
minutes then 6 minutes on top rack finish with broil for 2-3 minutes until top
of the omlette is golden brown.
