Mark’s Meatloaf

1 1/2 lbs. Ground Beef (or you can sub ground chicken or turkey)
1 cup seasoned bread crumbs
2 eggs beaten
8 oz. seasoned tomato sauce or ketchup
1/2 cup diced onions.
2 TBSP chopped fresh parsley
1 1/2 tsp. salt
1 crushed bay leaf
1/2 tsp dried thyme
1/2 tsp ground sage
Mix all ingredients together and form into a meatloaf pan. Bake at 350 for one hour. Add Piquant Sauce (see recipe) to the top of meatloaf for the last ten minutes.
Piquant Sauce:
1/4 ketchup
1 tsp. ground mustard
1/4 tsp ground nutmeg
Mix together and pour on meatloaf as it cooks the final 10 minutes (I make a double batch so I have dipping sauce for the mealtoaf, but that's optional).
