Baked Stuffed Shrimp
12 large cleaned and peeled shrimp
1 sleeve crushed ritz crackers
2 tbsp of minced onion
1 tbsp of minced garlic
2 tbsp chopped parsley
1 tbsp of black pepper
1 oz white wine
1ox fresh lemon juice
1/2 stick of butter
combine all ingredients in sauce pan and until butter melts and onions become clear.
slice each shrimp down the middle to make space to add the stuffing
bake in pyrex baking dish 350 oven 22 minutes
meatless pasta
1 lb thin spaghetti cooked
pecerino romano cheese
2 tbsp of chopped parsley
1 tbsp. basil
1tbs red pepper
1 tbsp. black pepper
1/4 cup chopped black olives
1/3 cup chopped green olives
1/3 cup olive oil
1oz of white wine
1/3 cup chicken broth
3 tbsp. of capers
2 tps chopped hot peppers
mix all in sauce pan over moderate heat 10 min..
add to cooked pasta and add some grated pecerino romano cheese and serve
Chicken marsella
1/2 lb. chopped in cubes thin chicken breasts
1/3 cup chopped fresh parsley
1/3 cup olive oil
1/3 cup chopped garlic
1/2 cup chopped mushrooms
2 tbsp salt
2 tbsp pepper
1/3 cup marsella cooking wine
1/3 cup chicken broth
flour to dust patted dry chicken cubes
combine all ingredients in large deep skillet pan and cook over moderate heat 10 min add the cubed chicken cover and simmer until done around 30 mis..add some chicken broth if it begins to dry out.
stuffed mushrooms
1 package large white mushrooms
1/3 cup bread crumbs
4 cooked strips of bacon
1 chopped clove garlic
1/4 cup chopped onion
1 tbsp melted butter
1tbs chopped parsley
dash of tabasco
1 tps salt
1 tps pepper
mix ingredients in pan
stuff mushrooms and then bake at 375 for 25 min.
